Scientists Discover a Surprising Connection Between High-Carb Diets and Longevity

In the heartland of the United States during the 1960s, Dan Buettner was raised on a diet that many Americans of his generation could relate to – a diet characterized by high-carb staples like bright yellow macaroni and cheese and sweaty red hot dogs wrapped in flaky croissants.

“We didn’t know better,” Buettner recalls. However, his journey would take him far beyond the borders of Minnesota, leading him to discover the secrets of some of the world’s healthiest and longest-living communities known as the “Blue Zones.”
Venturing into these Blue Zones, where individuals routinely celebrate their 100th birthdays in good health, Buettner uncovered a common thread in their dietary habits that contrasted starkly with his own upbringing.

These remarkable communities, which include places like Japan, Greece, Italy, and Costa Rica, demonstrated diets that were far from the processed foods he was familiar with. Instead, they all embraced a diet built upon four key pillars: whole grains, greens, nuts, and beans.
