In 2001, Chef Ito arrived to enhance Mai’s compassionate vision by adding vegan living foods. Chef Ito coined the term Humanese with the belief that we have more in common than we realize. Rather than see ourselves as separate, we are all merely - and wonderfully - human. No labels, no man-made borders to divide us.
